Recent 'stunnel' versions (eg. 4.00) do not take options
from the command line, but rather from a configuration file,
which is specified as a command line argument.

This new behaviour of 'stunnel' (it's a major version upgrade
after all, 3.xx -> 4.00) breaks some of the tests which use
the -p option (no longer available).
