In the end I ended up changing build script to this one:
https://github.com/sinofool/build-libcurl-ios

It works well, no weird dependencies and they apply a patch for the header
file fixing the 64bit compatibility.

I guess what confused me the most was that I actually needed to modify the
header by hand. Would it not be possible to take care of this
automatically by the curl build system? In Visual Studio and maybe other
IDE¹s it is easy to point to a special include directory depending on the
architecture but I did not find such an option in xCode so having one
single header out of the box without patching would be nice.
