If you are doing it from the command line:

. ./setenv-ios.sh

export CPP="cpp"
export CC="clang -arch armv7 -arch armv7s --sysroot=$IOS_SYSROOT"
export CXX="clang++ -arch armv7 -arch armv7s s--sysroot=$IOS_SYSROOT"

 ./configure --host=x86_64-darwin --host=arm --with-sysroot=$IOS_SYSROOT ...

*If* you want to build for ARM64, you will likely need to add
-mios-version-min=7.0. OpenSSL did not need it when compiling under
Clang, while Crypto++ and libevent, and libcurl did.
