$ make "VERSIONINFO=-version-info 6:0:2"

Done.

The 6:0:2 series in this case comes from the existing libcurl release and the
numbers are documented in the libtool man page:

      -version-info CURRENT[:REVISION[:AGE]]
             specify library version info [each variable defaults to 0]
