I use Ethereal for this: it is free, and even open source, and it works on
various systems. http://www.ethereal.com/
Now, unless I missed something, extracting meaningfull information (clear
text exchanges) from the detailled network output isn't obvious.
Some proxies allows to save the headers and pages, too.
