I finally figured this one out.

In case anyone has a similar issue in the future, the problem was simply that the curl lib needed to be listed before libcrypto and libssl.

This one is not ok:
LOCAL_STATIC_LIBRARIES += opus-prebuilt ssl-prebuilt crypto-prebuilt curl-prebuilt

While this one is:
LOCAL_STATIC_LIBRARIES += opus-prebuilt curl-prebuilt ssl-prebuilt crypto-prebuilt

Not sure why but I finally recalled I had the same issue in the past with putting libcrypto before libssl and it caused the same problem.
