I do link the pthreads library for other areas of the application. I am
not using threads within the context of libcurl. I would not think
threading is the problem here, but I can make the necessary changes to
support mutex callbacks. Do you have any docs on doing that?

Any chance you're running a multi threaded program without the mutex
callbacks
set?
