V6R1M0 is not available as a target release since IBM i 7.2. To keep from having to keep this up to date in git, default to the current release. Users can configure this to whatever release they want to actually build for.
The wrapper will exit if the system command failed instead of blindly continuing on. In addition, only copy docs which exist, since now the copy failure will cause the build to stop.

This allows a better default build setup which will stop on failure, which is needed for automated builds to detect status.
